摘 要:文章采用Cite Space数据图谱软件结合CNKI文献检索技术,对1980—2022年期间出版的重要川菜学术著作的发文情况、核心期刊、主要机构、重点学术问题和关注热点等进行了数据统计分析。结果发现,国内在该方面的研究论文数量总体呈现上升趋势。四川旅游学院是重要的研究机构,发文量位居第一,在相关研究中占重要地位。核心研究者主要分布在川渝地区,各研究团队和机构之间合作不够深入,其研究层次、主办期刊质量、团队实力有待进一步提高。产业化与智能化、传承与创新、提升品牌效应以及探索新路径是其最受关注的研究方向;其中川味菜肴、川菜文化、工业化是主要的研究热点。川菜企业作为长期立足于中国餐饮业有着丰富底蕴的产业,打破对传统川菜的认知模式、充分发挥科学作用、创新专业技术具有重要意义,目前正缺乏深入研究,这将是今后川菜产业发展的一个重要突破口。This paper employs a combination of the CNKI literature retrieval technology and the advanced data visualization and analysis software,CiteSpace.This integration results in the creation of clear and concise graphical representations of the analyzed literature,which in turn enables a deeper comprehension of the research area.With core journals,leading institutions,key academic questions,and research hotspots identified,data analysis of important academic publications on Sichuan cuisine between 1980 and 2022 reveals an overall increasing trend in the quantity of research papers published in this field in China.Sichuan Tourism University as an important research institution,ranking the first in the number of publications and playing an important role in relevant research.The core researchers are mainly distributed in Sichuan and Chongqing.However,cooperation between research teams and institutions is not deep enough.Depth of research,quality of specialized journals and team strength can be further improved.Industrialization and intelligentization,inheritance and innovation,promotion of brand effect and exploration of new paths are the main research orientations.Sichuan cuisine,Sichuan cuisine culture and industrialization are the main research hot spots.Sichuan cuisine industry,with profound cultural heritage,has long since established itself in China.It is of great significance to break the traditional cognitive paradigm of Sichuan cuisine,give full play to science,and innovate professional technology.The development of the Sichuan cuisine industry calls for in-depth research,which may bring about important breakthroughs in the future.
