摘  要:本试验旨在研究喷浆玉米皮替代玉米粉对山羊生长发育、采食和消化、屠宰性能、血清生化指标及肉品质的影响。选用24只体况良好、体重相近的9月龄湘东黑山羊,随机分成2组,每组12只。玉米粉组饲喂基础饲粮,喷浆玉米皮组饲喂以喷浆玉米皮替代玉米粉的试验饲粮。预试期10 d,正试期80 d。结果表明:1)玉米粉组和喷浆玉米皮组之间山羊的体重、体高、体斜长、胸围、尻长和荐高的初始值和终末值均没有显著差异(P>0.05)。2)与玉米粉组相比,喷浆玉米皮组山羊的有机物、淀粉和总能的表观消化率显著降低(P<0.05),粗蛋白质、中性洗涤纤维和酸性洗涤纤维的表观消化率显著提高(P<0.05)。3)与玉米粉组相比,喷浆玉米皮组山羊的血清白蛋白含量显著降低(P<0.05),血清尿素含量显著升高(P<0.05),其他血清生化指标无显著差异(P>0.05)。4)玉米粉组和喷浆玉米皮组之间山羊的眼肌面积、背膘厚和心脏、肝脏、脾脏、肺脏、肾脏重量及其指数均无显著差异(P>0.05)。5)玉米粉组和喷浆玉米皮组之间山羊的背最长肌、臀中肌和股外侧肌的肉色、pH_(45 min)、pH_(24 h)、剪切力、滴水损失、系水力和熟肉率均无显著差异(P>0.05)。由此可见,喷浆玉米皮替代玉米粉对山羊生长性能、屠宰性能和肉品质无不利影响,说明喷浆玉米皮可以作为饲料原料应用于山羊养殖。This experiment was conducted to investigate the effects of replacing corn flour with corn gluten on growth and development,feeding and digestion,slaughter performance,serum biochemical indexes and meat quality of goats.Twenty⁃four healthy 9⁃month⁃old Xiangdong black goats with similar body weight were ran⁃domly divided into 2 groups with 12 goats in each group.The goats in the corn flour group were fed a basal di⁃et,and the goats in the corn gluten group were fed the experimental diet with corn gluten completely replacing corn flour.The pre⁃experimental period lasted for 10 days,and the experimental period lasted for 80 days.The results showed as follows:1)there were no significant differences in initial value and final value of body weight,body height,body oblique length,heart girth,rump length,hip cross height of goats between corn flour group and corn gluten group(P>0.05).2)Compared with corn flour group,the apparent digestibility of organic matter,starch and gross energy of goats of corn gluten group was significantly decreased(P<0.05),and the apparent digestibility of crude protein,neutral detergent fiber and acid detergent fiber was significantly increased(P<0.05).3)Compared with corn flour group,the serum albumin content of goats of corn gluten group was significantly decreased(P<0.05),the serum urea content was significantly increased(P<0.05),and other serum biochemical indexes were no significant differences(P>0.05).4)There were no significant effects in loin eye area,backfat thickness and weight and indexes of heart,liver,spleen,lung and kidney of goats between corn flour group and corn gluten group(P>0.05).5)There were no significant effects in meat color,pH45 min,pH24 h,shear force,water loss rate,water holding capacity and cooked meat rate of longissi⁃mus dorsi,gluteus medius and vastus lateralis between corn flour group and corn gluten group(P>0.05).In conclusion,replacing corn flour with corn gluten has no adverse effects on the growth performance,slaughter performance and meat quali
