摘 要:为响应国家高质量发展要求,提升胶东地区小麦及其小麦产品的品质,以胶东地区为选种主要区域选育的品种和适于胶东地区种植的主要栽培品种的42份小麦品种为研究材料,对品种审定公告涉及品质方面的籽粒蛋白质含量、湿面筋、沉淀值、吸水率、稳定时间、面粉白度、容重7个方面进行分析。结果表明,胶东小麦以中强筋和中筋小麦为主,多数小麦籽粒蛋白质含量、湿面筋含量、沉降值符合强筋小麦标准,但稳定时间不足,制约了小麦品种品质级别跨越,后期胶东小麦需通过改良稳定时间以寻求品质突破。In order to meet the national requirements of high-quality development and improve the quality of wheat and wheat products in Jiaodong Region,42 wheat varieties suitable for cultivation in Jiaodong region and varieties selected from the main regions were used as research materials.Analysis was carried out on seven aspects of grain protein content,wet gluten,precipitation value,water absorption,stability time,flour whiteness and bulk density related to quality of variety certification announcement.Results showed that Jiaodong wheat was mainly medium-strong gluten and medium-strong gluten,and most of the wheat grain protein content,wet gluten content and sedimentation value meet the standards of high-gluten wheat,but the lack of stability time restricts the jump of wheat variety quality grade.The quality breakthrough of Jiaodong wheat should be sought through improving the stabilization time.
