摘 要:基于Hofmeister效应通过静电纺丝法在聚乳酸-羟基乙酸共聚物膜上复合了明胶纤维膜,借助扫描电子显微镜、傅里叶变换红外光谱仪与差示扫描量热仪研究了明胶与柠檬酸钾的质量浓度对明胶纤维膜的形貌、分子间相互作用以及热性能的影响。结果表明:当明胶水溶液质量浓度为140 g/L时,通过静电纺丝能够得到表面光滑、直径均一的明胶纤维膜。随着柠檬酸钾质量浓度的增加,明胶纤维的直径显著增加,当柠檬酸钾的质量浓度增加到40 g/L时,明胶的纤维结构消失,形成了均一致密的薄膜结构。柠檬酸根是一种强kosmotropic离子,能够促进明胶分子链脱水,增强蛋白质分子间的氢键作用,破坏明胶分子的有序结构,降低蛋白质的结晶度。Gelatin fiber films were prepared by electrospinning on the poly(lactic-co-glycolic acid)films based on Hofmeister effect.The effects of the concentrations of gelatin and potassium citrate on the morphology,intermolecular interaction and thermal properties of gelatin fiber film were studied by using scanning electron microscope,Fourier-transform infrared spectroscopy and differential scanning calorimetry.Results showed that,when the concentration of gelatin solution was 140 g/L,the gelatin fiber membrane with smooth surface and uniform diameter distribution could be obtained by electrospinning.With the increase of potassium citrate concentration,the diameter of gelatin fiber increased significantly.When the concentration of potassium citrate was increased to 40 g/L,the fiber structure of gelatin disappeared and a uniform and dense film formed.Citrate is a strong kosmotropic ion,which can promote the dehydration of gelatin molecular chain,enhance the hydrogen bonding among protein molecules,destroy the ordered structure of gelatin molecules and reduce the crystallinity of protein.
