摘 要:人参是我国传统名贵中草药,具有大补元气、复脉固脱等功效。人参中富含皂苷类、多糖类、氨基酸及多肽等多种化学成分。小分子肽是多肽的一种,具有分子量小、易于吸收等优点。目前小分子肽在功能食品中的应用已经成为研究热点。经过大量文献检索汇总后,对人参中小分子肽的分离纯化方法、化学结构鉴定、药理作用等内容进行了综述。为其研发有关的食品、保健品和临床营养科膳食提供一定参考及理论依据,并对其将来研究发展方向进行了展望。Ginseng is a traditional and valuable Chinese herbal medicine in China,which has the effects of tonifying the primordial qi and restoring the pulse to relieve desertion.It is rich in saponins,polysaccharides,amino acids,polypeptides and other chemical components.Small molecule peptide is a kind of polypeptide,which has the advantages of small molecular weight and easy absorption.At present,the application of small molecule peptides in functional foods has become a research hotspot.In this study,after a large literature retrieval and summary,its separation and purification methods,chemical structure identification and pharmacological actions are reviewed.The study is expected to provide some references and a theoretical basis for its research and development of related foods,nutraceuticals and clinical nutrition meals,and to look forward to its future research and development direction.
