摘 要:试验旨在研究等差速压片破碎机快慢辊差速比和压片厚度对熟化玉米品质的影响。采用3×3双因素试验设计,玉米压片厚度设为3.0、2.5、2.0 mm共3个水平,快慢辊差速比设1∶1、3∶2、2∶1共3个水平,共9个处理组,每个处理3个重复,每个重复熟化压片破碎玉米100kg,熟化温度为(110±5)℃,熟化时间45 min。测定9个饲料样本在相同条件自然风干后的含粉率、淀粉和理化指标。结果显示,差速比能够极显著影响玉米含粉率(P<0.01),压片厚度能够显著影响玉米含粉率(P<0.05),差速比1∶1或压片厚度3.0 mm时,玉米含粉率最低。差速比、压片厚度和互作对玉米淀粉糊化度以及直链淀粉、支链淀粉、总淀粉和抗性淀粉含量影响均不显著(P>0.05)。差速比、压片厚度及其互作可极显著影响玉米水分含量(P<0.01),压片厚度2.0 mm和差速比2∶1时,玉米水分含量最低;差速比可以极显著影响玉米容重(P<0.01),差速比1∶1时,玉米容重最高。研究表明,从熟化压片破碎玉米的容重角度分析,压片厚度为2.00 mm、快慢辊差速比为2∶1时生产的压片破碎熟化玉米较好。The study was to study the effect of speed ratio of fast and slow rollers of flake crusher and flake thickness on corn quality.A 3×3 two factors experiment was designed with thickness of flaked corn was 3.0,2.5,2.0 mm,and speed ratio of fast and slow roller was 1∶1,3∶2,2∶1.Nine treatments groups with three replicates for each treatment,and 100 kg flake-crushed corn of each replicate was investigated.The gelatinization temperature of corn was(110±5)℃for 45 min.The powder percentage,starch and biochemical parameters of air-dried corn was tested.The results showed that speed ratio extremely affected corn flour content(P<0.01),and flake thickness significantly affected corn flour content(P<0.05).The lowest powder percentage was observed in group of differential speed ratio of 1∶1 and thickness of flaked corn of 3.0 mm.The speed ratio and corn thickness had no significant impact in the starch gelatinization,amylose,amylopectin,starch and resistant starch content of corn(P>0.05).The speed ratio,corn thickness and the interaction of two factors extremely infected the corn moisture(P<0.01).The corn moisture of group in corn flake thickness of 2.0 mm and differential speed ratio of 1∶1 was the lowest(P<0.01).The speed ratio could extremely affect the bulk density of maize(P<0.01),and the bulk density of maize was the highest when the speed ratio was 1∶1.The experiment indicates that from the perspective of bulk density of maize analysis,when the thickness of tablet is 2.00 mm and the speed ratio of fast and slow roll is 2∶1,the crushing and curing corn produced by tablet pressing is better.
