摘 要:为了解4种不同防霉剂对非密闭条件下植物乳杆菌发酵饲料的防霉效果及发酵品质的影响,试验在发酵饲料中分别添加0.3%双乙酸钠(A组)、0.3%双乙酸钠与丁酸钠复合物(质量比3∶1,B组)、0.3%双乙酸钠与山梨酸钾复合物(质量比2∶1,C组)、0.3%肉桂醛与丁香酚复合物(体积比2∶1,D组),同时设不添加任何防霉剂的对照组,于试验第0,2,3,4,5,6,7,8,9,15天取样观察饲料外观,第0,2,3,5,6,9天取样检测饲料pH值、乳酸含量,第0,2,3,4,5,6,8,9天取样统计植物乳杆菌和霉菌数目,评估其防霉效果和对发酵品质的影响。结果表明:4种防霉剂对霉菌生长均有一定的抑制作用,D组发酵饲料在试验第8天仍未出现霉变;在试验的第3~9天,A、B、C、D组的pH值均显著低于对照组(P<0.05),乳酸含量均显著高于对照组(P<0.05),以D组发酵饲料的pH值最低、乳酸含量最高。说明0.3%肉桂醛与丁香酚复合物防霉效果最好,在发酵饲料中添加8 d内可起到很好的防霉效果。This study aims to evaluate the anti-mold effect and fermentation quality of four different anti-mold agents on fermented feed of Lactobacillus plantarum under non-enclosed conditions.In the experiment,0.3%sodium diacetate(A group),0.3%sodium diacetate and sodium butyrate complex(mass ratio 3:1,B group),0.3%sodium diacetate and potassium sorbate complex(mass ratio 2:1,C group),and 0.3%cinnamaldehyde and eugenol complex(volum ratio 2:1,D group)were added to the fermented feed,and a control group without adding any anti-mold agent was set up.Samples were taken on days 0,2,3,4,5,6,7,8,9,and 15 of the experiment to evaluate the appearance of the feed.On days O,2,3,5,6,and 9 of the experiment,samples were taken to detect the pH value and lactate content of the feed.On the 0,2,3,4,5,6,8,and 9 days of the experiment,samples were taken to detect the number of Lactiplantibacillus plantarum and mold in the feed.Evaluate the anti-mold effect and fermentation quality of different anti-mold agents on the quality of fermented feed.The results showed that all four anti-fungal agents had a certain inhibitory effect on the growth of mold,and the fermented feed in the D group did not show mildew on the 8th day of the experiment.The pH values in groups A,B,C,and D were significantly lower than that in the control group(P<0.05)on days 3-9,while lactate content was significantly higher than that in the control group(P<0.05).Among them,group D had the lowest pH value and the highest lactate content.The results indicated that the compound of O.3%cinnamaldehyde and eugenol exhibited the best anti-mold effect,and adding it to the fermented feed showed a significant anti-mold effect within 8 days..
