摘 要:为研究不同鸡种肌肉的营养价值,试验利用液相色谱-质谱联用技术(LC-MS)对90日龄科宝肉鸡和茶花鸡胸大肌的脂质组成进行表征。结果显示:从6个科宝肉鸡和6个茶花鸡胸大肌样品中共检测到1242种脂质分子,其中甘油磷脂(PC、PE、PS等)、甘油脂(TG、DG)和鞘脂(SM、Cer等)的种类较多,分别为729、325和138种,其他大类(脂糖脂类、肪酸类和孕烯醇酮脂类)中的脂质分子种类均在30种以内。进一步经多维统计分析和单变量统计分析,筛选到46个显著差异脂质分子,包括26个PC、11个TG、5个DG、2个AcCa、1个PE和1个PS。其中除了10个PC以外,其他脂质分子含量均表现为科宝肉鸡较高。结果表明,科宝肉鸡和茶花鸡胸大肌脂质组差异物质主要集中在PC和TG上,即甘油磷脂类和甘油脂类。In order to investigate the nutritional value of muscle from different chicken breeds,the lipid composition of breast muscle in 90-day-age Cobb Broiler and Chahua chicken was characterized based on liquid chromatography-mass spec⁃trometry(LC-MS).The results showed that:a total of 1242 lipid molecules were detected from breast muscle samples of 6 Cobb broilers and 6 Chahua chickens,among which glycerophospholipids(PC,PE,PS,etc.),glycerolipids(TG and DG)and sphingolip⁃ids(SM,Cer,etc.)were the most common(729,325,138,respectively).The number of lipid molecules in other major groups(sac⁃charolipids,fatty acids and prenol lipids)was less than 30.After further multidimensional statistical analysis and univariate statis⁃tical analysis revealed 46 significantly different lipid molecules,including 26 PC,11 TG,5 DG,2 AcCa,1 PE and 1 PS.Except for 10 PCs,the contents of other lipid molecules were higher in Cobb broilers.The results showed that the differences in lipid composition of breast muscle in Cobb broilers and Chahua chickens were mainly concentrated in PC and TG,namely glycerol phospholipids and glycerolipids.
