摘  要:试验旨在以申鸿七彩雉、申鸿白雉和申鸿绿雉为育种素材进行杂交试验,研究不同杂交组合的生长性能及肌肉品质。试验用常规方法测定不同杂交组合的生长性能和肉品质指标、肌内脂肪和蛋白质含量,利用统计学方法对各杂交组合的相关测定指标进行比较分析。结果显示:四个杂交组合公雉鸡体斜长、龙骨长、胫围、胫长、骨盆宽、胸宽、胸深、活体重、屠体重、半净膛重、全净膛重和腿肌重均极显著高于母雉(P<0.01)。B组合(申鸿白雉♂×申鸿七彩雉♀)公雉屠体重显著高于D组合(申鸿七彩雉♂×申鸿白雉♀)公雉和E组合(申鸿白雉♂×绿雉♀)公雉(P<0.05),半净膛重显著高于E组合公雉(P<0.05),全净膛重显著高于A组合(申鸿七彩雉♂×绿雉♀)公雉、D组合公雉和E组合公雉(P<0.05)。E组合公雉失水率显著低于A组合母雉、D组合公雉和E组合母雉(P<0.05),剪切力显著大于A组合母雉和B组合公雉(P<0.05)。A组合公雉蛋白质含量极显著高于B组合母雉(P<0.01),水分含量显著低于A组合母雉、B组合公母雉和E母雉(P<0.05)。综合指标分析,公雉鸡体尺性状和屠宰性能优于母雉鸡,杂交组合B组合公雉具有较好的屠宰性能,杂交组合E组合公雉失水率低,剪切力大,嫩度较差,杂交组合A组合公雉蛋白质含量高,但水分含量低。The aim of this experiment was to study the growth performance and muscle quality of different cross combina⁃tions,and to conduct cross experiments with Shenhong Qicai pheasant,Shenhong white pheasant and Shenhong green pheasant as breeding materials.The growth performance,meat quality,fat content and protein content of different cross combinations were measured by conventional methods,and the indexes were compared and analyzed by statistical methods.The results showed that the oblique length,keel length,shin circumference,shin length,pelvic width,chest width,chest depth,body weight,carcass weight,semi-eviscerated weight,eviscerated weight and leg muscle weight of four hybrid male pheasants were significantly high⁃er than those of female pheasants(P<0.01).The carcass weight of B(Shenhong white pheasant♂×Shenhong Qicai pheasant♀)was significantly higher than that of D(Shenhong Qicai pheasant♂×Shenhong white pheasant♀)and E(Shenhong white pheas⁃ant♂×Shenhong green pheasant♀)(P<0.05),the semi-eviscerated weight was significantly higher than that of E(P<0.05),and the eviscerated weight was significantly higher than that of A(Shenhong Qicai pheasant♂×Shenhong green pheasant♀),D and E(P<0.05).The water loss rate of pheasant E was significantly lower than that of female pheasant A,D and E(P<0.05),and the shear force was significantly higher than that of female pheasant A and B(P<0.05).The protein content of A male pheasant was significantly higher than that of B pheasant(P<0.01),and the water content of A female pheasant was significantly lower than that of A female pheasant,B pheasant and E pheasant(P<0.05).The comprehensive index analysis showed that the body size traits and slaughter performance of public pheasants were better than female pheasants,hybrid combination B had good slaughter per⁃formance,hybrid combination E pheasants had low water loss rate,high shear force and poor tender,hybrid combination A pheas⁃ants had high protein content but low water content.
