摘 要:目的优化猪蹄甲的微波炮制工艺,为进一步研究猪蹄甲的炮制工艺提供参考。方法采用正交试验法对猪蹄甲的微波炮制时间、微波火力和样品堆积厚度3个因素进行研究,并对不同因素下的猪蹄甲炮制品的水溶性浸出物含量进行测定和比较,优化猪蹄甲微波炮制工艺。结果通过正交试验法得出猪蹄甲炮制的最佳工艺条件为微波火力高火(输出功率100%),炮制时间为5.5min,样品厚度为2cm,水溶性浸出物含量为9.58%。结论优化后的猪蹄甲炮制工艺合理、稳定、可行,可为进一步研究猪蹄甲的炮制工艺提供理论与实验依据,也为更加广泛地应用猪蹄甲提供参考依据。Objective This paper aims to optimize the microwave processing technology of pig nails and provide evidence for further study in this field.Methods The orthogonal test was used to study the microwave processing time,microwave fire-power,and sample packing thickness of the pig nail.The water-soluble extract content of processed pig nail products under different factors was determined and compared to optimize the microwave processing technology.Results The orthogonal test showed that the optimum technological conditions were high microwave fire(output power 100%),with a processing time of 5.5 min,sample thickness of 2 cm,and water-soluble extract content at 9.58%.Conclusion The optimized pro-cessing technology of the pig nail is reasonable,stable,and feasible,which can provide a theoretical and experimental basis for further study in this field and provide evidence for its more extensive application.
