摘  要:类菌胞素氨基酸(Mycosporine-like amino acids,MAAs)是一类在食品、医药和化妆品等领域中具有广阔应用前景的活性化合物。羊栖菜、海带、马尾藻和裙带菜是MAAs的天然来源,然而,国内外未见此4种大型褐藻MAAs活性研究。为明确这些MAAs具有在食品中应用的潜力,文章首先分析了羊栖菜、海带、马尾藻和裙带菜MAAs提取物的体外抗氧化和吸湿保湿活性,并研究了它们对生湿面的保湿和对鲜切藕片的抗褐变作用。进一步,采用高效液相色谱-质谱方法测定4种大型褐藻MAAs组成。结果表明,羊栖菜等4种大型褐藻MAAs提取物具有一定的清除超氧阴离子、羟基自由基和DPPH自由基的能力,其中马尾藻MAAs提取物表现出最强的清除能力,对超氧阴离子、羟基自由基和DPPH自由基的半抑制率(IC50)依次为6.998、1.349 mg/mL和0.121 mg/mL。裙带菜和羊栖菜MAAs提取物的吸湿能力好于丙三醇和透明质酸,羊栖菜、马尾藻和裙带菜MAAs提取物保湿效果强于丙三醇和透明质酸。加入羊栖菜等4种大型褐藻MAAs提取物的鲜切藕片和生湿面在室温(15℃左右)放置4 d,样品的褐变指数和水分流失率均明显低于对照组。经高效液相色谱-质谱检测并与文献对比,确定了羊栖菜等4种大型褐藻MAAs提取物中58%~78%为Palythine、shinorine、porphyra-334和Palythenic acid等4种MAA,这可能是此4种大型褐藻MAAs提取物具有抗氧化和吸湿保湿活性的原因。羊栖菜等4种大型褐藻MAAs显示出在食品中的应用潜力。Mycosporine-like amino acids(MAAs)have broad application prospects in food,medicine,cosmetics and other fields.MAAs widely existed in brown macroalgae.Up to now,the research on the activity analysis of MAAs of brown macroalgae has not been reported at home and abroad.In order to clarify the potential of these MAAs in food applications,this work first analyzed the antioxidant,moisture absorption and moisturizing activities of MAA extracts from Hizikia fusifarme,Laminaria japonica,Sargassum sp.,and Undaria pinnatifida in vitro,and studied their moisturizing effects on wet noodles and anti-browning effects on fresh cut lotus root slices.Furthermore,the composition of MAAs from four species of brown macroalgae was determined by high performance liquid chromatography-mass spectrometry.Results showed that,MAA extracts from 4 species of brown macroalgae have some ability from scavenging superoxide anion,hydroxyl radical and DPPH radical.Among them,MAA extracts from Sargassum sp.showed the strongest scavenging ability,and the half inhibition rate(IC50)of superoxide anion,hydroxyl radical and DPPH radical was 6.998,1.349 mg/mL and 0.121 mg/mL,respectively.The moisture absorption capacity of MAA extracts from Undaria pinnatifida and Hizikia fusifarme is better than that of glycerol and hyaluronic acid,and the moisture retention effect of MAA extracts from Hizikia fusifarme,Sargassum sp.and Undaria pinnatifida is stronger than that of glycerol and hyaluronic acid.The fresh cut lotus root slices and wet noodles with MAA extracts from four species of brown macroalgae were placed at room temperature(about 15℃)for 4 days,and the browning index and water loss rate of these samples were significantly lower than those of the control group.After high performance liquid chromatography-mass spectrometry detection and comparison with the literature,58%~78%of these MAA extracts from the four species of brown macroalgae were identified as palythine,shinorine,porphyra-334 and palythenic acid,which may be the reason why the MAA extracts
