摘 要:作为饮食类纪录片的一个重要分支,街头饮食纪录片建构了“人间烟火”的美食景观,从而凸显纪录片的文化生产对现实的形塑作用。基于街头饮食正经历内涵转型的物质现实,纪录片再现和强调了街头食物的原真价值、市井空间的怀旧审美及摊贩人物的传奇叙事,以实现纪录片主创为街头饮食赋予文化合法性意义的主观意图。文章对国内外街头饮食纪录片之修辞策略与文化中介的考察与辨析,将有助于理解以纪录片为代表的视听媒介对日常现实的文化理想化运作。As an important branch of food documentaries,street food documentaries construct a foodscape of the“mundane world”,highlighting the role of documentary cultural production in shaping reality.Based on the material reality that street food is undergoing a connotative transformation,the documentaries reproduce and emphasize the authenticity of street food,the nostalgic aesthetics of the street space and the legendary narrative of street vendors,in order to realise the subjective intention of the documentary maker to legitimise the street food culture.This paper examines and identifies the rhetorical strategies and cultural intermediations of several street food documentaries,which will help to understand the operation of the audiovisual media represented by the documentary as a cultural idealization of daily reality.
