摘 要:为提高葛根的资源利用率,以葛根为原材料,采用化学酸碱法提取了葛根中的膳食纤维素,通过单因素实验和正交实验以获得提取膳食纤维素的最佳工艺条件。结果表明:提取膳食纤维素的最佳工艺是碱处理料液比1∶20、pH值为11、温度60℃、时间120 min,提取率为72.26%;酸处理料液比1∶10、pH值为4、温度50℃、时间80 min,提取率为71.13%。根据各单因素实验和正交实验的各影响因素的关系,碱处理对膳食纤维素的提取影响较大,而酸处理对膳食纤维素的提取影响较小。The planting area of Pueraria lobata is extensive,and a large amount of Pueraria lobata resources are wasted during the deep processing process.In order to improve the resource utilization rate of Pueraria lobata,this paper uses Pueraria lobata as raw material and extracts dietary fiber from Pueraria lobata through chemical acid-base method.Through single factor experiments and orthogonal experiments,the optimal process conditions for extracting dietary fiber are obtained.The experimental results show that the optimal process for extracting dietary fiber is alkaline treatment with a material liquid ratio of 1:20,pH 11,temperature of 60℃,and time of 120 minutes;the extraction rate was 72.26%;According to the relationships between the various influencing factors in the single factor and orthogonal experiments,alkali treatment has a greater impact on the extraction of dietary fiber,while acid treatment has a smaller impact on the extraction of dietary fiber.
