摘 要:水稻与人们的生活和国民经济息息相关。随着社会经济的快速发展,在保持水稻高产的同时对稻米品质进行改良已经成为育种家们的主要目标。稻米品质主要包括碾磨品质(milling quality,MQ)、外观品质(appearance quality,AQ)、蒸煮与食味品质(eeating and cooking quality,ECQ)以及营养品质(nutritional quality,NQ)4类指标。在相关研究进展基础上,概述了稻米品质性状的构成,综述相关基因的定位和克隆及其在稻米品质改良中的利用,以期为进一步改良稻米品质提供参考。Rice is closely related to people’s lives and the national economy.With the rapid development of social economy,improving rice quality with maintained high yield has become the main goal of breeders.Rice quality mainly includes milling quality(MQ),appearance quality(AQ),eating and cooking quality(ECQ)and nutritional quality(NQ).In this paper,based on the recent research progress,the composition of rice quality traits was briefly summarized.Moreover,the mapping,cloning and application of related genes in rice quality improvement were also reviewed.Information summarized here may provide cues for further improvement of rice quality.
