摘  要:本研究以酵母硒为原料制备了3种工艺的硒产品(颗粒硒、粉体硒和水解硒),并对比研究亚硒酸钠与颗粒硒、粉体硒和水解硒对育肥猪生长性能、血清抗氧化指标及硒在组织中沉积的影响。结果表明:颗粒硒、粉体硒和水解硒组的粗蛋白质、总硒含量无明显差异,但水解硒组的酸溶蛋白、氨基酸态氮和溶解率明显提高;从生长性能指标来看,不同硒源对育肥猪的平均日增重(ADG)、平均日采食量(ADFI)和料重比(F/G)无显著影响(P>0.05);从抗氧化指标来看,相比亚硒酸钠组,水解硒组和粉体硒组谷胱甘肽过氧化物酶(GSH-Px)的含量显著提高(P<0.05);从血清、肝脏、和肌肉中硒含量来看,相比亚硒酸钠组,颗粒硒组、粉体硒组和水解硒组血清中硒的含量显著提高(P<0.05),并且粉体硒组和水解硒组的肝脏和肌肉总硒含量显著高于亚硒酸钠组(P<0.05)。综上所述,水解酵母硒能提高硒酵母的酸溶蛋白含量,同时提高育肥猪的抗氧化性能及硒在组织中的快速沉积。In this study,three kinds of selenium products(particle selenium,powder selenium and hydrolyzed selenium)were prepared using selenium yeast as raw materials,and the effects of sodium selenite and particle selenium,powder selenium and hydrolyzed selenium on growth performance,serum antioxidant indexes and selenium deposition in tissues of finishing pigs were compared.The results showed that there was no significant difference in the crude protein and total selenium content between granular selenium,powder selenium and hydrolyzed selenium,but the acid soluble protein,amino acid nitrogen,and solubility of hydrolyzed selenium group were significantly increased;In terms of growth performance indicators,different selenium sources had no significant effect on the average daily gain(ADG),average daily feed imtake(ADFI),and feed/gain(F/G)of fattening pigs(P>0.05);In terms of antioxidant index,compared with sodium selenite group,hydrolyzed selenium group and powdered selenium group could significantly increase the content of GSH-Px(P<0.05);From the perspective of selenium content in serum,liver and muscle,compared with the sodium selenite group,the granular selenium group,powder selenium group and hydrolyzed selenium group could significantly increase the selenium content in serum(P<0.05),and the total selenium content in liver and muscle of the powder selenium group and hydrolyzed selenium group was significantly higher than that of the Sodium selenite group(P<0.05).In summary,hydrolyzing yeast selenium could increase the acid soluble protein content of selenium yeast,while improving the antioxidant performance and rapid deposition of selenium in tissues of fattening pigs.
