摘 要:脂质体是一种具有生物相容性、无毒性、两亲性的新型封装载体,在药物递送、功能性食品及化妆品领域研究越来越广泛。但由于脂质体在贮存过程中不稳定,易发生脂质氧化水解,产生聚集现象,芯材易泄露,这可能会限制其应用。解决这一问题的有效方法之一是利用壳聚糖等生物大分子对脂质体表面加以修饰以改善其理化稳定性和生物利用度。该文对壳聚糖膜表面修饰脂质体的研究现状、稳定性评价及生物利用率的研究进展及其在食品领域的应用进行了综述,以期为壳聚糖膜表面修饰脂质体的研究与应用提供理论参考。Liposomes are a new type of encapsulation carrier with biocompatibility,non-toxicity and amphiphilicity.They have been studied more and more widely in the fields of drug delivery,functional food and cosmetics.However,due to the instability of liposomes during storage,lipid oxidation and hydrolysis are prone to occur,resulting in aggregation,and the core material is easy to leak,which may limit their application.One of the effective ways to solve these problems is to use biomacromolecules such as chitosan to modify the surface of liposomes to improve their physical and chemical stability and bioavailability.The research status,stability evaluation,bioavailability of chitosan-coated liposomes and their application in the food field were reviewed,in order to provide further theoretical reference for the research and application of chitosan-coated liposomes.
