摘  要:猴头菇是一种营养丰富的食(药)用菌,市场上猴头菇精深加工产品越来越多,关于猴头菇保鲜贮藏及加工工艺技术研究也逐渐深入。对猴头菇保鲜贮藏及加工工艺技术研究进展进行了综述,指出猴头菇保鲜贮藏应重注降本增效,多种保鲜技术相互结合使用,关注中小型栽培户需求。猴头菇加工工艺研究方面存在科技成果转化率不高的问题,大多数未形成产业化体系,经济效益不明显,应加强研究成果转化,并结合地方特色农产品进行一、二、三产业融合。Hericium erinaceus is a kind of nutrient-rich edible(medicinal)fungus.There are more and more deep-processing products of H.erinaceus in the market,and the research on H.erinaceus fresh-keeping storage and processing technology is deepening gradually.The research progress of H.erinaceus fresh-keeping storage and processing technology was reviewed.It was pointed out that in terms of H.erinaceus fresh-keeping storage,we should pay attention to reducing cost and increasing ef-ficiency.The combination of various preservation technologies and attention to the needs of small and medium-sized farmers.In terms of processing technology research,the conversion rate of scientific and technological achievements is not high,most of them have not been industrialized,and the economic benefits are not obvious.In order to solve these problems,the transforma-tion of research achievements should be strengthened and the integration of primary,secondary and tertiary industries should be combined with local characteristic agricultural products.
