摘 要:白酒企业生产涉及诸多用水环节,且伴随大量高耗水农产品和工业产品的投入,以及生产中的污染物排放.因此有必要对白酒企业水足迹进行核算,找出其中用水及水污染关键环节,从而为企业节水提供依据.以酱香型白酒企业为例,基于全生命周期分析法梳理了该类企业水足迹核算内容,构建蓝、绿、灰水足迹核算框架,继而应用该框架对A企业进行水足迹核算及分析.结果表明,(1)白酒企业水足迹核算包含运营水足迹、供应链上游水足迹核算两部分,分别核算白酒企业生产运营过程中以及各类投入品或服务自身生产中的用水量及污水排放水平.(2)A企业总水足迹为1928.2万t/年,其中供应链上游水足迹占比高达83.05%;运营水足迹主要由灰水足迹组成,对应占比97.2%,而绿水足迹则是供应链上游水足迹主要组成部分(占比61.8%);供应链上游水足迹主要来自农产品投入所产生的水足迹(占比99.74%).继而从政府、企业层面对白酒企业节水提出建议.The production of Chinese Baijiu enterprises involves a lot of water consumption links,and with the input of a large number of high-water consumption agricultural products and industrial products,as well as the discharge of pollutants in the production.Therefore,it is necessary to calculate the water footprint of Chinese Baijiu enterprises and find out the key links of water consumption and water pollution,so as to provide a basis for enterprises to save water.Taking sauce-flavor Baijiu enterprise as an example,based on the Life Cycle Assessment(LCA),the water footprint accounting content of this kind of enterprise was sorted out,and the blue water footprint,green water footprint and gray water footprint accounting framework was constructed,and then the framework is applied to the water footprint accounting of A enterprise.The results show that(1)The water footprint accounting of Chinese Baijiu enterprises includes the operating water footprint accounting and the upstream water footprint accounting of supply chain.The operating water footprint accounts of water consumption and sewage discharge levels in the production and operation process of Chinese Baijiu enterprises,while the upstream water footprint of supply chain accounts of water consumption and sewage discharge levels in the production process of various production inputs or services of Chinese Baijiu enterprises.(2)Enterprise A has a total water footprint of 19.282 million tonnes per year,of which upstream water footprint of supply chain accounts for 83.05%;The operating water footprint is mainly composed of grey water footprint,accounting for 97.2%.The green water footprint accounts for the largest proportion(accounting for 61.8%)of the upstream water footprint of supply chain;The upstream water footprint of supply chain in enterprise A is mainly attributed to water footprint generated by agricultural inputs(accounting for 99.74%).Based on this,suggestions for water conservation in Chinese Baijiu enterprises are proposed at government and enterprises le
