摘 要:“环县羊羔肉”是著名的地理标志产品。为了在发生造假事件或食品安全事故后快速实施问题产品的召回,以及对其品牌进行保护,对环县小产地的肉羊进行溯源研究极为必要。本研究采用稳定同位素技术(δ^(13)C、δ^(15)N、δ^(2)H和δ^(18)O)对环县境内3个乡镇的肉羊进行溯源研究。通过建立主成分分析、正交偏最小二乘判别分析和线性判别模型对甘肃省庆阳市环县境内3个乡镇的羊毛和羊血的4种稳定同位素比值进行判别分析,并对羊毛和羊血中的稳定同位素比值进行相关性分析。结果表明,3个乡镇的羊毛原始判别准确率为95.0%,交叉验证判别准确率为91.3%;羊血原始判别准确率和交叉验证判别准确率均为97.5%。综上所述,采集可活体取样、易保存的羊毛或羊血样品进行稳定同位素分析是一种对肉羊进行乡镇级小产地溯源的有效手段,有利于肉羊活体建档及低成本构建肉羊数据库。本研究结果不仅为环县肉羊溯源研究提供了基础数据支持,也为其他农产品小产地溯源研究提供了新思路。“Huan County lamb”is a famous geographical indication product.It is necessary to conduct traceability research on the lamb from Huan County to quickly implement a recall of defective products in the event of fraud or food safety accidents,as well as to protect its brand,stable isotope technology(δ^(13)C,δ^(15)N,δ^(2)H and,δ^(18)O)was used to conduct traceability research on lamb from three towns in Huan County.Discriminant analysis was performed on the four stable isotope ratios of wool and blood samples from the three towns in Huan County using principal component analysis,orthogonal partial least squares discriminant analysis,and linear discriminant models.Correlation analysis was also conducted on the stable isotope ratios in wool and blood samples.The results showed that the original discriminant accuracy of wool samples from the three towns was 95.0%with a cross-validation discriminant accuracy of 91.3%.The original discriminant accuracy of blood samples was 97.5%with a cross-validation discriminant accuracy of 97.5%.In conclusion,collecting easily preserved samples of wool or blood from live lambs for stable isotope analysis is an effective method for traceability research on town-level small-scale lamb township districts.It is beneficial for establishing individual records of lambs and building a low-cost lamb database,which provides basic data support for traceability research on lamb in Huan County,and offers new ideas for traceability research on other agricultural products from small-scale districts.
