摘 要:本研究以14个强筋小麦为试验材料,设置三个不同水分管理,探讨基因型和水分管理对蛋白质含量、湿面筋含量、沉淀值、吸水率、稳定时间、拉伸能量和最大拉伸阻力共7个品质性状指标的影响。结果表明,不同品种间品质性状指标差异显著,其中蛋白质含量和吸水率变异系数较小,而衡量面筋质量指标的稳定时间、拉伸能量和最大拉伸阻力变异系数较大。因此,使用衡量面筋的三个品质指标进行强筋小麦育种和品种改良应该会更加高效。不同水分管理下,随着水分增加,蛋白质含量和吸水率均升高,拉伸能量和最大拉伸阻力则降低。同时,湿面筋含量、沉淀值和稳定时间均在适当增加水分W1处理下最高,这说明强筋小麦栽培管理中,要结合生产所需的目标品质指标进行水分管理。利用不同品种和水分管理下的品质指标做主成分分析,共筛选出8个品质综合性状都较好的品种,并在适当灌水的W1处理下综合品质得分最高。主成分分析综合考虑了多品质性状指标受基因型和水分管理因素的影响,可作为筛选综合品质较好品种和评价栽培管理措施的一种方法。The study was aimed to analyze the effect of different genotypes and water management on the quality traits,including grain protein content,wet gluten content,zeleny sedimentation,water absorption,dough stability time,extensibility energy and maximum resistance.14 strong gluten wheat varieties were used as experimental materials,and three different water managements were set up.The results showed that there were significant vari ance in quality traits among different wheat varieties.The coefficient of variance(C.V)of grain protein content and water absorption were lower,which indicated that the differences among varieties were small.The C.V of dough stability time,extensibility energy and maximum resistance of gluten quality indexes were higher.Therefore,it should be more efficient to apply gluten quality indexes for strong gluten wheat breeding and variety improvement.Under different water management,with the increase of water content,grain protein content and water absorption increased,while extensibility energy and maximum resistance decreased.The wet gluten content,zeleny sedimentation value and dough stability time were highest under the water W1 treatment.The above results showed that water management should be combined with the required quality index in the strong gluten wheat cultivation and management.Principal component analysis(PCA)was used to select 8 varieties with better comprehensive quality traits,and the highest comprehensive quality score was obtained under W1 treatment with proper irrigation.PCA comprehensively considered of the influence of genotype and water management factors on quality traits,and could be used an important method to select varieties with better comprehensive quality and evaluate cultivation management measures.
