摘 要:本研究通过对18种叶菜用甘薯品种叶片中的蛋白质、总酚、氨基酸、抗坏血酸、纤维素、维生素E含量等指标进行测定,结果表明:不同品种间的物质含量差异显著,蛋白质、VB1含量最高的是‘鄂菜薯1号’;总酚含量最高的是‘福薯23’;氨基酸含量最高的是‘福薯7-6’;维生素C含量最高的是‘湛菜台71’;类黄酮含量最高的是‘黔菜薯1号’;维生素E含量最高的是‘湘薯18’;VB6含量最高的是‘湘菜薯2号’;纤维素含量和亚硝酸盐含量最低的是‘广菜薯5号’。经隶属函数综合分析,品质最佳的品种为‘鄂菜薯1号’,排名前5的依次为‘鄂菜薯1号’、‘黔菜薯2号’、‘黄叶菜薯’、‘福薯23’、‘黔菜薯1号’。经相关性分析,总酚含量与氨基酸含量、总酚含量与类黄酮含量、氨基酸含量与纤维素含量之间存在相关性。本研究通过对不同品种进行品质分析,为品种资源的进一步利用研究提供理论依据。In this study,the contents of protein,total phenol,amino acid,ascorbic acid,cellulose,vitamin E were measured in 18 vegetable sweet potato varieties were studied.The results showed that the substance content of different varieties was significantly different,and the highest protein and VB1content was'Ecaishu No.1';the highest total phenol content of'Fushu23';the highest amino acid content is'Fushu7-6';the highest vitamin C content was'Zhancaitai71;'Qcaishu No.1'with the highest flavonoid content;the highest vitamin E content of'Xiangshu18';the highest content of VB6'Xiangcaishu No.2';the lowest content of cellulose and nitrite is'Guangcaishu No.5'.According to the comprehensive analysis of membership function,the best quality is'Ecaishu No.1',and the top 5 are'Ecaishu No.1','Qiancaijiao No.2','Huangyecaishu','Fushu 23','Qcaishu No.1'.The correlation analysis showed that there were correlations between total phenol content and amino acid content,total phenol content and flavonoid content,amino acid content and cellulose content.Through the quality analysis of different varieties,this study provides a theoretical basis for the further utilization of variety resources.
