摘  要:贮藏深度是影响稻谷贮藏品质的关键控制因素,为此本文主要研究了低温贮藏下不同贮藏深度对稻谷品质的影响,以期为低温贮藏方式在稻谷中的应用提供理论参考。对不同深度的样品进行比较,探究不同贮藏深度(上层、中层、下层)对稻谷水分、灰分、可溶性蛋白及氨基酸含量的影响,同时结合偏最小判别分析筛选稻谷中的特征游离氨基酸。结果表明,不同深度对稻谷水分无显著性影响(p>0.05),但对稻谷灰分、可溶性蛋白及部分游离氨基酸含量存在显著性影响(p<0.05)。其中,上层样品的稻谷灰分和游离氨基酸总量最高;下层稻谷水分最高,灰分含量最低。进一步利用PLS-DA筛选出赖氨酸、丙氨酸、组氨酸、脯氨酸、谷氨酸和苯丙氨酸为稻谷的特征游离氨基酸。Storage depth is a key control factor affecting the storage quality of rice.Therefore,this article mainly studies the impact of different storage depths on rice quality under low-temperature storage,in order to provide theoretical reference for the application of low-temperature storage methods in rice.Compare samples from different depths,the effects of different storage depths(upper,middle,and lower layers)on the moisture,ash content,soluble protein,and amino acid content of rice were explored.At the same time,the characteristic free amino acids of rice were screened using partial minimum discriminant analysis.The results showed that different depths had no significant impact on the moisture content of rice(p>0.05),but there is a significant impact on the ash content,soluble protein,and some free amino acid content of rice(p<0.05).The ash content and free amino acid content of rice in the upper layer samples were the highest.The moisture and essential amino acid content of the lower layer of rice are the highest.The lower layer of rice has the highest moisture content and the lowest ash content.Further use of PLS-DA to screen lysine,alanine,histidine,proline,glutamic acid,and phenylalanine as characteristic free amino acids for rice.
