摘  要:为揭示黄金百香果果实发育过程中果实品质形成规律和糖酸代谢限速酶活性变化,本研究以黄金百香果为研究材料,测定黄金百香果果实外观品质、内在品质和EMP-TCA代谢限速酶活性等数据,并进行相关性分析。结果表明:(1)随着黄金百香果的果实发育,果皮厚度不断减少,可食率不断增加。(2)可溶性固形物(TSS)和可溶性糖含量逐渐上升,在T5时期(花后14周)均达到最大值,且在T7时期(花后16周)出现退糖现象;可滴定酸(TA)含量在T3时期(花后12周)含量最高。因此,T6时期果实风味最佳。(3)EMP-TCA代谢限速酶与果实糖酸含量具有相关性,TSS与磷酸果糖激酶、柠檬酸合酶呈负相关,与丙酮酸激酶、胞浆异柠檬酸脱氢酶呈正相关;可溶性糖与己糖激酶、丙酮酸激酶、α-酮戊二酸脱氢酶呈正相关,与柠檬酸合酶呈负相关;TA与己糖激酶、磷酸果糖激酶、柠檬酸合酶、胞浆异柠檬酸脱氢酶、α-酮戊二酸脱氢酶呈负相关,与丙酮酸激酶呈正相关。本研究结果为黄金百香果最佳食用期的选择和品质改善提供参考依据。In order to reveal the law of fruit quality formation and the activity of rate-limiting enzyme in glycolic acid metabolism during the fruit development of passion fruit gold,this study used golden passion fruit as the research materials,and measured the appearance quality,internal quality and EMP-TCA metabolism rate-limiting enzyme activity of golden passion fruit,and conducted correlation analysis.The results showed that:(1) With the development of the golden passion fruit,the peel thickness decreased and the edible rate increased.(2) The contents of soluble solids(TSS) and soluble sugars increased gradually,and reached the maximum at T5(14 weeks after anther),and the phenomenon of sugar decantion appeared at T7(16 weeks after anther);the content of titratable acid(TA)was the highest T3(12 weeks after anthesis).Therefore,the fruit flavor at T6 was the best.(3) There is a correlation between EMP-TCA metabolism rate-limiting enzyme and fruit sugar acid content,TSS was negatively correlated with phosphofructokinase and citrate synthase,and positively correlated with pyruvate kinase and cytoplasmic isocitrate dehydrogenase;soluble sugars were positively correlated with hexokinase,pyruvate kinase andα-ketoglutarate dehydrogenase,but negatively correlated with citrate synthase;TA was negatively correlated with hexokinase,phosphofructokinase,citrate synthase,cytoplasmic isocitrate dehydrogenase and α-ketoglutarate dehydrogenase,but positively correlated with pyruvate kinase.The results of this study provide a reference for the selection of the best edible period and quality improvement of golden passion fruit.
