摘 要:为获得微生物分布的基础数据、帮助工厂识别微生物风险点并评价防腐体系的有效性.文章对洗涤剂厂的生产环境和生产过程中的微生物风险进行了调查研究。连续3个月对工厂的空气、水样、原材料、设备表面、包装材料和生产过程进行微生物采样并检测,利用分子生物学方法对生产过程中的污染菌进行了菌种鉴定,并通过最小抑菌浓度(MIC)测定和防腐挑战试验评价工厂所用防腐剂的有效性及其对所生产成品的防腐效能。实验表明,原材料、设备表面和包装材料中均未检出微生物;空气中有两个位点的浮游菌总数超标,达到了2 010 CFU/m3和2 030 CFU/m3,分别位于4月份的乳化间和5月份的生产车间,其他时间和位点浮游菌总数均<1 000 CFU/m3,在合格范围内;生产用水在3个月份的抽检中均存在菌落超标的现象,菌落总数在102~105CFU/m L之间;生产过程取样均在加入活性物和助剂的步骤中检出了微生物,从中分离出了25株细菌,MIC值均<0.01%,优势菌为肺炎克雷伯氏菌和阴沟肠杆菌。添加标准菌株和优势菌株到生产成品中进行防腐挑战测试均能通过,说明所用防腐剂有效且产品防腐性能良好。该工厂微生物风险点为空气、水样及生产过程中添加活性物和助剂的步骤,成品及时添加防腐杀菌剂后防腐效能良好。因此,建议工厂加强对风险点的监督管理,降低微生物污染风险。In order to obtain the basic data of microbial distribution,help the factory identify microbial risk points and evaluate the effectiveness of anti-corrosion system,this paper investigates the microbial risk in the production environment and production process of detergent factory.The air,water samples,raw materials,equipment surfaces,packaging materials and production process of the factory were sampled and tested for microorganisms for three consecutive months.The contaminated bacteria in the production process were identified by molecular biology methods,and the effectiveness of the preservative used in the factory and the anti-corrosion efficiency of the finished products were evaluated by the determination of minimum inhibitory concentration(MIC)and the anticorrosion challenge test.The results showed that no microorganisms were detected in raw materials,equipment surfaces and packaging materials.In the air,the total number of planktonic bacteria in two sites exceeded the standard,reaching 2010 CFU/m^(3)and 2030 CFU/m^(3),which were the emulsification room in April and the production workshop in May,respectively.The total number of planktonic bacteria in other time and sites was less than<1000 CFU/m^(3),which was within the acceptable range.The production water has exceeded the standard in sampling inspection for three months,and the total number of colonies is between 102 and 105 CFU/mL.In the sampling process,microorganisms were detected in the step of adding active substances and additives,and 25 strains of bacteria were isolated from them,all with MIC values less than 0.02%.The dominant bacteria were Klebsiella pneumoniae and Enterobacter cloacae.Adding standard strains and dominant strains to the finished product can pass the anti-corrosion challenge test,which shows that the preservative used is effective and the product has good anti-corrosion performance.The microbial risk points in this factory are air,water samples and the steps of adding active substances and additives in the production process.Afte
