摘 要:本试验旨在研究饲粮中添加桑叶提取物对绿头鸭生长性能、屠宰性能、肉品质、血清生化指标及抗氧化能力的影响。选用30日龄、体重相近的绿头鸭360只,随机分为4组,每组6个重复,每个重复15只。对照组饲喂基础饲粮,试验组分别在基础饲粮中添加100、200、400 mg/kg桑叶提取物。预试期7 d,正试期60 d。结果表明:1)400 mg/kg组平均日增重显著高于对照组(P<0.05)。2)200、400 mg/kg组胸肌率和腿肌率显著高于对照组(P<0.05)。3)200、400 mg/kg组肌肉亮度和红度值比对照组显著提高(P<0.05),肌肉黄度值比对照组显著降低(P<0.05)。4)400 mg/kg组肌肉胆固醇含量显著低于对照组(P<0.05),肌苷酸含量显著高于对照组(P<0.05)。5)与对照组相比,400 mg/kg组血清胆固醇、葡萄糖和低密度脂蛋白胆固醇含量显著降低(P<0.05)。6)与对照组相比,400 mg/kg组血清总抗氧化能力、总超氧化物歧化酶和谷胱甘肽过氧化物酶活性显著提高(P<0.05)。综上所述,绿头鸭饲粮中添加桑叶提取物可提高生长性能和屠宰性能,改善肉品质,提高抗氧化能力。本研究推荐绿头鸭饲粮中桑叶提取物适宜添加水平为400 mg/kg。The purpose of this study was to investigate the effects of dietary mulberry leaf extract on growth performance,slaughter performance,meat quality,serum biochemical indexes and antioxidant capacity of mallards.A total of 360 mallards with similar weight at 30 days of age were randomly divided into 4 groups with 6 replicates per group and 15 mallards per replicate.The control group was fed a basal diet,and the experimental groups were fed 100,200 and 400 mg/kg of mulberry leaf extract in the basal diet.The pre-experimental period was 7 days and experimental period was 60 days.The results showed as follows:1)the average daily gain in 400 mg/kg group was significantly higher than that in control group(P<0.05).2)Breast muscle percentage and leg muscle percentage in 200 and 400 mg/kg groups were significantly higher than those in control group(P<0.05).3)Meat brightness and redness values in 200 and 400 mg/kg groups were significantly increased compared with control group(P<0.05),while meat yellowness value was significantly decreased compared with control group(P<0.05).4)Meat cholesterol content in 400 mg/kg group was significantly lower than that in control group(P<0.05),and inosine content was significantly higher than that in control group(P<0.05).5)Compared with control group,serum cholesterol,glucose and low density lipoprotein cholesterol contents were significantly decreased in 400 mg/kg group(P<0.05).6)Compared with control group,serum total antioxidant capacity,superoxide dismutase and glutathione peroxidase activities were significantly increased in 400 mg/kg group(P<0.05).In conclusion,dietary supplementation of mulberry leaf extract of mallards can improve growth performance and slaughter performance,meat quality and enhance serum antioxidant capacity.In this study,400 mg/kg of mulberry leaf extract is recommended for mallard ducks.
