摘  要:动物性食品作为人类饮食结构中的重要组成部分,却极易受到食源性致病菌污染,给人类健康造成重大威胁。由于动物性食品生产环节繁多,使得污染预防困难重重,因此动物性食品中食源性致病菌检测是预防和控制动物性食品安全问题的重要环节。文章从技术特点、适用范围等方面综述了动物性食品中食源性致病菌的检测技术。在对传统方法和新兴技术的比较与分析过程中,结合当前动物性食品问题现状和食源性致病菌检测需求,对相关技术发展方向提出展望,以期为动物性食品中食源性致病菌检测相关研究提供理论参考。As an extremely important part of the human diet,animal-derived foods are highly susceptible to contamination by foodborne pathogens,which poses a major threat to human health.Due to the many production links of animal-derived foods,which makes pollution prevention difficult,the detection of foodborne pathogens in animal-derived foods is an important part of the prevention and control of animal-derived foods safety.In this paper,the detection of foodborne pathogens in animal-derived foods is reviewed from the aspects of technical characteristics and scope of application,and in the process of comparing and analyzing traditional methods and emerging technologies,combined with the current status in animal derived food,problems and the detection needs for foodborne pathogens,the development direction of related technologies is prospected,in order to provide a theoretical reference for the research on the detection of foodborne pathogens in animal-derived foods.
