摘 要:湖州朱肱所著《北山酒经》,是我国现存的第一部全面系统论述制曲酿酒工艺的专门著作,有多种版本流传。现存最早版本是南宋初浙江地区刻本,是后世各种版本的源头。本文通过爬梳相关书目文献,比对目前所见多种重要的抄本、刊本,勾勒出诸本的流传轨迹,考索传世诸本的源流关系,对还原其真实面目和进一步研究有所裨益。Beishan Wine Classic written by Zhu Gong of Huzhou is the first existing special work that comprehensively and systematically discusses the craft of making koji and brewing wine in China.It comes in many versions.The earliest extant version is the Zhejiang engraving in the early Southern Song Dynasty,which is the source of various versions in later generations.In this paper,by combing the relevant bibliography and comparing various important manuscripts and editions seen so far,the paper outlines the circulation track of these copies and explores the source relationship of these handed down to the world,which is helpful to restore their true features and further collate and study.
