摘　　要：综述了不同氧化剂包括次氯酸钠,过氧化氢,高锰酸钾和高碘酸氧化淀粉的机理,探究了在氧化生产工艺过程,分析影响淀粉分子内羰基和羧基含量的因素。由于氧化剂的差异,对其所生成产物性能、应用等方面进行对比分析得出不同种类氧化淀粉的优缺点,根据它们具有不同的特性来适应和满足不同行业的需求。同时阐述了这些氧化淀粉的性质,介绍了氧化淀粉的主要工业应用。In this paper,the oxidation mechanism of starch by different oxidants including sodium hypochlorite,hydrogen peroxide,potassium permanganate and periodate was reviewed,and the factors affecting the content of carbonyl and carboxyl groups in starch molecules were analyzed.Due to the difference of oxidants,the advantages and disadvantages of different kinds of oxidized starch were compared and analyzed in terms of the properties and applications of the products,and the advantages and disadvantages of different kinds of oxidized starch were obtained.At the same time,the properties of these oxidized starches are described,and the main industrial applications of oxidized starches are introduced.
