摘  要:试验旨在探究桑糖化饲料对蛋肉两用小脚麻花鸡生长性能及肉品质的影响。选取250只50日龄的健康小脚麻花鸡,随机分为5组,每组5个重复,每个重复10只鸡。Ⅰ组(对照组)、Ⅱ组、Ⅲ组、Ⅳ组、Ⅴ组分别饲喂含0、15%、25%、30%和35%桑枝叶粉的桑糖化饲料。预试期5 d,正式试验期40 d。结果显示,与对照组相比,Ⅳ组小脚麻花鸡的平均日增重升高(P<0.05),且料重比降低(P<0.05)。与对照组相比,各试验组鸡肉的剪切力和蒸煮损失均降低(P<0.05),滴水损失有所降低;Ⅲ组和Ⅳ组鸡肉中必需氨基酸总量和氨基酸总量高于其他组(P<0.05);各试验组鸡肉中鲜味氨基酸含量提高(P<0.05),脂肪含量降低(P<0.05)。与对照组相比,Ⅳ组小脚麻花鸡的屠宰率升高(P<0.05),各试验组小脚麻花鸡的胸肌率和腿肌率升高(P<0.05)。研究表明,日粮中添加桑枝叶粉可以提高小脚麻花鸡肌肉的总氨基酸含量、胸肌率及腿肌率,改善鸡肉品质,桑枝叶粉添加比例以25%~30%为宜。The experiment was conducted to investigate the effects of mulberry saccharification feed on the growth performance and meat quality of dual-purpose small feet Twist chickens.A total of 250 healthy small feet Twist chickens aged 50 days were randomly divided into five groups with five replicates in each group and ten chickens in each replicate.GroupⅠ(control group),GroupⅡ,GroupⅢ,GroupⅣ,and GroupⅤwere fed a mulberry saccharified feed containing 0,15%,25%,30%,and 35%mulberry twig and leaf powder,respectively.The pre-test period was 5 days,and the experimental period was 40 days.The results showed that compared with the control group,the average daily gain of small feet Twist chickens in GroupⅣincreased(P<0.05),and the ratio of feed to weight decreased(P<0.05).Compared with the control group,the shear force and cooking loss of chicken in all experimental groups were reduced(P<0.05),with a slight reduction in drip loss.The total amount of essential amino acid and total amino acid of the chicken in GroupⅢand GroupⅣwere higher than those in other groups(P<0.05).Compared with the control group,the concentrations of umami amino acids in the chicken of all experimental groups increased(P<0.05),while the fat concentration decreased(P<0.05).Compared with the control group,the slaughter rate of GroupⅣincreased(P<0.05),and the chest muscle percentage and leg muscle percentage in all experimental groups increased(P<0.05).The study indicates that adding mulberry branches and leaves powder to the diet can increase the total amino acid,breast muscle percentage,and leg muscle percentage of small feet Twist chickens,and improve the quality of meat.The appropriate proportion of mulberry twig and leaf powder is 25%~30%.
