摘  要:竹笋肉质鲜嫩、清脆爽甜,是一种深受消费者喜爱的纯天然绿色健康食品。竹笋含有丰富的多糖、膳食纤维、黄酮和生物碱等生物活性物质,具有抗氧化、降血糖等功效。但随着竹笋加工业的不断发展,竹笋加工过程会产生大量笋头、笋壳等副产物,这些副产物往往被直接丢弃、燃烧或用作畜禽饲料,利用率较低,造成极大浪费,也对生态环境带来一定危害。这些副产物中同样含有较多生物活性物质,如何提高竹笋副产物的利用率逐渐成为竹笋产业迫切解决的问题。因此,对竹笋加工副产物中的天然活性物质(如多糖、膳食纤维、黄酮和生物碱等)的研究现状进行综述,总结了天然活性物质的提取方法、结构和活性作用与机制,以期为竹笋加工副产物活性物质的有效利用提供一定理论支撑。Bamboo shoots are fresh and tender,crisp and sweet,and are a kind of pure natural green healthy food loved by consumers.Bamboo shoots are rich in polysaccharides,dietary fiber,flavonoids,alkaloids and other bioactive substances,with antioxidant,hypoglycemic effect.However,with the continuous development of bamboo shoot processing industry,a large number of by-products produced during the processing of bamboo shoots,such as bamboo shoots and bamboo shoots,were often directly discarded burned or used as livestock and poultry feed.It was not only a low utilization rate and great waste of resources,but also bring some harm to the ecological environment.These by-products also contain many bioactive substances.How to improve the utilization rate of bamboo shoot by-products has gradually become an urgent problem to solve in bamboo shoot industry.Therefore,this paper reviewed the research status of natural active substances(such as polysaccharides,dietary fiber,flavonoids and alkaloids)in the by-products of bamboo shoot processing,and summarized the extraction methods,structure,activity and mechanism of them,in order to provide a theoretical support for the quality and efficiency utilization of active substance of by-products of bamboo shoot processing.
