摘  要:以梅花鹿鹿筋为试材,采用单因素试验和正交试验优化鹿筋胶原蛋白的提取工艺,经过试验获得最佳工艺条件为A_(1)B_(2)C_(2)D_(2),即醋酸浓度为0.5 mol/L,料液比为1∶40 g/mL,浸泡时间为30 h,胃蛋白酶与底物比例为1∶700,在此工艺条件下,鹿筋胶原蛋白回收率可达59%。Sika deer sinews were used as raw materials,single factor test and orthogonal test were used to optimize the collagen extraction process of deer sinews.The optimal process conditions were A_(1)B_(2)C_(2)D_(2),acetic acid concentration was 0.50 mol/L,solid to liquid ratio was 1:40 g/mL,soaking time was 30 hours,and the ratio of trypsin to substrate was 1:700.Under this process condition,the recovery rate of collagen in deer sinews could reach 59%.
