摘  要:硫酸铝钾[KAl(SO_(4))_(2)]又称明矾,常被加入到粉丝的制作工艺中为了改善粉丝韧劲差、易断裂的缺点,也能在一定程度上提升粉丝的口感。硫酸铝钾中的铝元素具有神经毒性,长期摄入过量的铝对人身体健康具有极大危害。常规测定粉丝中硫酸铝钾时,样品需要消解,处理方法繁琐且费时。而便携式X射线荧光光谱仪(XRF)具有体积小、操作简便、检测速度快和灵敏度高等优点还能同时测定多种金属元素。以粉丝为研究对象,以电感耦合等离子体质谱法(ICP-MS)为参比,建立了XRF对粉丝中的KAl(SO_(4))_(2)的快速检测与鉴别新方法,并将XRF技术用于鉴别粉丝中是否添加KAl(SO_(4))_(2)。首先使用方程对仪器进行基体效应修正,建立了峰面积和浓度的线性曲线,校正的工作曲线拟合R^(2)>0.99,可用于粉丝样品的测定。对仪器的检测条件进行优化。将样品直接上机测定时,XRF测试结果相对误差在0.65%~24.33%范围内。针对KAl(SO_(4))_(2)中铝含量小于100 mg·kg^(-1)的粉丝样品可采用快速碳化处理,将粉丝中低含量的铝富集后再测定,XRF测试结果相对误差为1.36%~15.39%,碳化处理极大缩短了样品直接测定的相对误差。研究发现添加了硫酸铝钾的粉丝标样Al、S和K元素成相关性,三种元素的比例在1∶3∶1~1∶4∶1范围内,而未添加硫酸铝钾的粉丝并不满足这个比例。便携式XRF能高效完成大批量样品分析,单次测试仅需5 min,方法快速、简便、经济、精密度高,同时可快速鉴别粉丝中是否添加KAl(SO_(4))_(2),及时发现食品质量安全隐患,为粉丝的质量控制提供了新思路,具有广泛的实际推广意义。Potassium aluminum sulfate[KAl(SO_(4))_(2)],also known as alum,is often added to the production process of fans to improve the characteristics of poor tenacity and easy fracture of fans,and it can also improve the taste of vehicles to a certain extent.The aluminum element in aluminum potassium sulfate has neurotoxicity,reproductive toxicity,and developmental toxicity.Long-term excessive intake of aluminum will do great harm to human health.In the conventional determination of aluminum potassium sulfate in vermiculate,the sample must be digested,and the treatment method is tedious and time-consuming.The portable X-ray fluorescence spectrometer(XRF)has the advantages of small size,simple operation,fast detection speed,and high sensitivity,and it can also determine a variety of metal elements at the same time.Therefore,taking vermin as the research object and using Inductively coupled plasma mass spectrometry(ICP-MS)as the reference,this paper established a new method for XRF to quickly detect and identify KAl(SO_(4))_(2) in vermin.XRF technology was used for the first time to identify whether KAl(SO_(4))_(2) was added to fans.Firstly,the matrix effect of the instrument was corrected by the equation,and the linear curve of peak area and concentration was established.The R^(2) of the corrected working curve was>0.99,which could be used to determine vermicular samples.Secondly,the detection conditions of the instrument are optimized.When the samples were directly tested on the machine,the relative error of XRF test results was 0.65%~24.33%.For vernacular samples with aluminum content less than 100 mg·kg^(-1) in KAl(SO_(4))_(2),rapid carbonization treatment can be used to determine the low content of aluminum in vernacular samples after enrichment.The relative error of XRF test results is 1.36%~15.39%,and carbonization treatment greatly reduces the relative error of direct determination of samples.In addition,it was found that there was a correlation between Al,S,and K elements in the standard samples with aluminum po
