摘  要:浆果类水果皮薄多汁、质地柔软,易受到机械损伤与病原菌侵染,是最难保存的果蔬种类。可食涂膜保鲜具有安全可食、隔绝保护、抑菌杀菌及增加营养价值等特点。概述了易腐浆果常用的保鲜技术,重点梳理了可食性涂膜最新研究结果,以期为易腐浆果保鲜提供参考。Berry fruits have thin and juicy skin,soft texture,vulnerable to mechanical damage and pathogenic bacteria,and are the most difficult types of fruits and vegetables to preserve.Edible film preservation has the characteristics of safe edible,isolation and protection,antibacterial and sterilization,and increasing nutritional value.This paper reviewed the commonly used preservatio techniques of perishable berries,and focused on the latest research results of edible coating,which was expected to provide reference for the preservation of perishable berries.
