摘 要:鲜食花生是指收获后不经干燥而直接食用或水煮后食用的花生,以其独特的风味和丰富的营养深受消费者的青睐。但不经处理的鲜花生含水量较高、贮藏稳定性差、货架期短。因此,采摘后保鲜是鲜食花生产业中需要解决的实际问题。分析了鲜食花生的优势及市场前景,综述了鲜食花生的营养价值和贮藏特性,阐述了鲜食花生采后保鲜加工现状、问题及发展方向,以期为实现鲜食花生反季供应提供理论依据。Fresh peanut refers to the peanut that is eaten directly after harvest without drying or boiling.It is favored by consumers for its unique flavor and rich nutritional value.However,untreated fresh peanut have high water content,poor storage stability and short shelf life.Therefore,preservation after picking is a practical problem to be solved in the fresh peanut industry.In this paper,the advantage and market prospect of fresh peanuts were analyzed,the nutritional value and storage characteristics of fresh peanuts were summarized,and the present situation,problems and develop-ment direction of fresh peanuts after harvest were expounded,which provided theoretical basis for the off-season sup-ply of fresh peanuts.
