摘　　要：灵芝是我国著名的药食两用真菌,含有多糖、三萜类化合物、蛋白质、多肽、甾醇等多种活性物质,具有抗肿瘤、抗菌、抗动脉粥样硬化、降血糖、降血脂、抗衰老、抗真菌、抗病毒和增强免疫等功效。灵芝一直作为预防、控制和治疗慢性疾病的药物或营养补充剂,其精深加工产品涉及医药、保健、食品、美妆等领域,但目前我国灵芝精深加工仍存在栽培人员技术水平低、技术研发与转化不足、产品质量参差不齐等问题。文中综述了灵芝精深加工的现状及存在问题,提出了今后的发展策略,对开发利用我国丰富的灵芝资源、促进灵芝产业发展、提高人民健康水平,具有重要意义。Ganoderma is the most famous medicinal and edible fungus in China.It contains polysaccharides,triterpenoids,proteins,peptides,sterols and other active chemical substances,which have the effectiveness of anti-tumor,anti-bacterial,anti-atherosclerosis,lowering blood glucose and blood lipids,anti-aging,anti-fungal and anti-viral,and enhancement of immunity as well.Ganoderma has been used longly as a drug or nutritional supplement for the prevention,control and treatment of chronic diseases,and its deep processing products,thereafter,cover a broad market involving medicine,health care,food and beauty,and so on.However,at present,the deep processing of Ganoderma in China still has unresolved issues as represented by the cultivator's low level of cultivation techniques,the shortage of research and technique transfer and the inequality of products in consumer markets.This article summarizes the current status and problems on the deep processing of Ganoderma together with proposals for creating our future research strategy,which is of certainly importance for the further development and utilization of Ganoderma resources,devolpment of Ganoderma industry and promotion of human health as well.
