化州柚果实不同部位成分生长过程中动态变化研究

摘　　要：目的:研究化州柚生长过程中外果皮、中果皮、果瓤的成分动态变化情况,综合评价化州柚不同部位内在质量。方法:采用HPLC法测定HPLC色谱图及柚皮苷、野漆树苷的含量,采用HS-GC/MS法测定HS-GC/MS色谱图及β-月桂烯、柠檬烯、γ-松油烯的峰面积,并测定醇溶性浸出物和水溶性浸出物的含量。结果:HPLC、HG-GC/MS检测结果均显示外果皮的化学成分最为丰富,其富含柠檬烯、β-月桂烯、γ-松油烯,中果皮、果瓤中挥发性成分极少;随着果实生长,各部位柚皮苷含量呈下降趋势,野漆树苷含量呈先升后降趋势,醇溶性浸出物含量呈先降后升趋势,水溶性浸出物含量变化幅度相对较小。结论:化州柚果实不同部位生长过程中内在质量不断变化,建议综合考量分别建立化橘红和化橘红胎鲜果采收标准,从源头保证产品质量相对稳定。Objective:To study the dynamic changes of the components of exocarp,mesocarp and fruit pulp in the growing process of Citrus grandis‘Tomentosa’,and to evaluate the internal quality of different parts of Citrus grandis‘Tomentosa’.Methods:The HPLC chromatogram and the contents of naringin and rhoifolin were determined by HPLC method.The HS-GC/MS chromatogram and the peak area ofβ-myrcene,limonene andγ-terpinene were determined by HS-GC/MS method,and the contents of alcohol-soluble extract and water-soluble extract were determined.Results:The results of HPLC and HG-GC/MS showed that exocarp was rich in limonene,β-myrcene andγ-terpinene,while the volatile components in mesocarp and fruit pulp were very little.With the growth of fruit,naringin content in all parts showed a decreasing trend,rhoifolin content showed a first increasing and then decreasing trend,alcohol-soluble extract content showed a first decreasing and then increasing trend,water soluble-extract content changed relatively little.Conclusion:The internal quality of different parts of Citrus grandis‘Tomentosa’fruit changes constantly during the growth process,so it is suggested that the fresh fruit harvest standards of Citrus Grandis Exocarpium and Citri Grandis Fructus Immaturus should be established respectively to ensure the relative stability of product quality from the source.
