摘  要:冷泡茶具有冲泡便捷、风味独特、有益健康等特点,深受消费者的喜爱,具有巨大的市场潜力。文章综述了国内外学者对冷泡茶的研究进展,包括冷泡茶的特点、制备工艺、冲泡方法及冷泡茶饮料加工技术等;分析了我国冷泡茶市场现状与发展前景,并提出了相应的发展策略,旨在为冷泡茶的研发、市场培育及扩张提供科学指导。Cold brew tea has the characteristics of easy brewing,unique flavor and health benefits,which is favored by consumers and has the huge market potential.We reviewed the research progress of cold brew tea products at home and abroad,including the characteristics of cold brew tea,preparation process,brewing method as well as cold brew tea beverage processing technology.Moreover,the current situation of cold brew tea market in China,the developing trend were interpreted,and the development strategies were raised,aiming to provide scientific guidance for the research and development of cold brew tea as well as its market cultivation and expansion.
