摘  要:磷是骨骼矿化必需的营养素,主要以植酸盐的形式储存于蛋鸡日粮中。尽管蛋鸡对磷的需求量不多,但供应过剩或不足都会对蛋鸡生产性能和鸡蛋质量产生负面影响。植酸盐是一种多聚阴离子,具有螯合正电荷阳离子的能力,从而降低钙、铁、锌和其他营养素的利用效率。目前,蛋鸡生产中采用添加外源性植酸酶或利用浸泡、发酵等技术激活内源植酸酶的方法来提高蛋鸡对磷的利用率。文章综述磷在蛋鸡骨代谢和动员中的作用以及磷的吸收、调节和代谢机制,探讨蛋鸡日粮中磷代谢的影响因素,以期为改善鸡蛋质量、保障蛋鸡健康提供理论依据。Phosphorus is an essential nutrient for bone mineralisation and is stored in the diet of laying hens mainly in the form of phytates.Although laying hens do not require much phosphorus,excess or insufficient supply can negatively affect production performance and egg quality of laying hens.Phytates are polyanions that have the ability to chelate positively charged cations,thereby reducing the utilisation efficiency of calcium,iron,zinc and other nutrients.Currently,the addition of exogenous phytase or the acti⁃vation of endogenous phytase using techniques such as soaking and fermentation are used in laying hen production to improve phos⁃phorus utilisation in laying hens.The article reviewed the role of phosphorus in bone metabolism and mobilisation of laying hens as well as the mechanisms of phosphorus absorption,regulation and metabolism,and discussed the influencing factors of phosphorus metabolism in laying hens′diet,with a view to provide theoretical basis for improving egg quality and safeguarding laying hens′health.
