摘  要:1909年麦角硫因(ergothioneine, EGT)首次被分离,是一种天然水性含硫氨基酸,具有强抗氧化能力,主要由微生物合成。作为一种极性小分子,麦角硫因在肠道有机阳离子转运体1(organic cation transporter 1,OCTN1)的帮助下穿过细胞膜,通过血液运输到肠道、肝脏和肾脏等全身器官,在预防和治疗各种疾病(如心血管疾病、肾脏疾病、糖尿病等)中发挥着重要作用。现就EGT的微生物合成、提取方法和检测手段,及其抗氧化作用在免疫性疾病中的研究进展作一概述。Ergothioneine(EGT),first isolated in 1909,is a naturally water-based sulfur-containing amino acids, a strong antioxidant, synthesized mainly by microorganisms. As a polar small molecule, EGT crosses cell membranes with the help of an organic cation transporter 1(OCTN1) in the gut and is transported through the bloodstream to organs throughout the body, such as the intestines, liver, and kidneys. It plays an important role in the prevention and treatment of various diseases(such as cardiovascular diseases, kidney diseases, diabetes). In this paper, the microbial synthesis, extraction and detection methods of EGT and the research progress of its antioxidant effect in immune diseases are reviewed.
