中华文化符号的地方建构与日常生活呈现:滇南石屏豆腐文化研究

摘　　要：石屏豆腐既是涵养于滇南独特自然环境中的一种地方特色食物,也是深植于石屏“文献名邦”历史底蕴的一个文化符号。作为地名和物产辨识标签的石屏豆腐,以其军屯戍边的历史叙事、“井水点制”的地方口感以及“非遗符号”的国家承认三重内涵为基础,演化为具有时空性、地方性、民族性等情感叙事效能的特殊地域文化符号,进而从传统的食物语境升华为各民族共享的中华文化符号。国家通过“非遗叙事”把石屏豆腐纳入非物质文化遗产名录,从而实现了对石屏豆腐的重新赋能和再符号化。对滇南石屏豆腐文化所蕴含的多重互动关系开展民族志深描,不仅可以丰富云南地域饮食文化的内涵,还可生动呈现边疆民族地区各民族交往交流交融实践的多维面向。jShiping tofu is not only a kind of local speciality cultivated in the unique natural environment of southern Yunnan,but also a cultural symbol deeply rooted in the historical background of Shiping,a place famous for its"historical documentaries".As the identification label of place name and local products,with the historical narrative of its stabilizing borderland through military residencies,the local taste of"being made by well water"and the national recognition of"intangible cultural heritage symbol",Shiping Tofu evolved into a special regional cultural symbol boasts space and time,local and ethnic characteristics with the emotional narrative efficiency.Then it further sublimated from the traditional food context to the Chinese cultural symbols shared by various ethnic people.The contemporary nation-state has included Shiping tofu into the intangible cultural heritage list through the"intangible cultural heritage narrative",thus realizing the re-empowerment and re-symbolization of Shiping tofu.The deep description of the multiple interactive relations of Shiping tofu culture in southern Yunnan can not only enrich the connotation of Yunnan regional food culture,but also vividly present the multiple interconnection and multi-dimensional orientation of the communication and integration practice of various ethnic groups in the border ethnic areas.
