单纯形重心法复配多糖/纳米纤维素水凝胶

摘  要:以海藻酸钠(SA)、黄原胶(XAN)、结冷胶(G)和纳米纤维素(NC)为水凝胶壁材,并采用{4,4}单纯形重心法进行试验设计筛选出最佳配方。对水凝胶的形态、质构特性、pH敏感性和傅里叶变换红外光谱进行分析。结果表明,添加NC增加水凝胶共混溶液的黏度,改善了表观形态、增强水凝胶的质构特性;傅里叶变换红外光谱显示NC和多糖之间具有良好的相容性,添加NC后提高水凝胶的膨胀率,复配的多糖/纳米纤维素水凝胶具有良好pH值敏感性。最后通过单纯形重心法得到理论最优组(SA19.25%;XAN24.10%;G41.00%;NC15.23%)。综上所述,最终成功采用单纯形重心法成功复配出具有良好的pH敏感性、稳定通过模拟胃环境的纳米水凝胶,这为复合水凝胶包埋需氧益生菌提供基础数据,且为研究与应用水凝胶递送系统提供了参考。In this study,sodium alginate(SA),xanthan gum(XAN),gelatin(G),and nanocellulose(NC)were utilized as encapsulating materials.The simplex barycenter method was employed to optimize the formulation through experimental design.The morphology,texture properties,pH sensitivity and Fourier transform infrared spectroscopy(FT-IR)of the hydrogels were analyzed.The results indicated that the addition of NC increased the viscosity of the hydrogel blend solution,improved the apparent morphology and enhanced the textural properties of the hydrogel,FT-IR showed good compatibility between NC and the polysaccharides.Furthermore,the inclusion of NC increased the swelling ratio of the hydrogel.The polysaccharide/nanocellulose composite hydrogel exhibited excellent pH sensitivity.The theoretical optimal composition was obtained through the simplex barycenter method(SA 19.25%;XAN 24.10%;G 41.00%;NC 15.65%).In conclusion,the final work used the simplex barycenter method to prepare the nanogel with excellent pH sensitivity,capable of stable passage through simulated gastric environments.This provides foundational data for the encapsulation of aerobic probiotics in composite hydrogels and offers a reference for further research and application of hydrogel delivery systems.
