摘 要:选取健康且体质量相近的5周龄雄性C57BL/6J小鼠24只,随机分为低脂饲粮组(LDF组)、高脂饲粮组(HDF组)、低脂饲粮添加100 mg/kg牛至油(Oo)组(LDF+Oo组)、高脂饲粮添加100 mg/kg牛至油组(HDF+Oo组)4组,每组6只。试验期为70 d,试验结束后立即采集小鼠肌肉组织、肝脏组织及血液样品,并采用ELISA、Western blot等方法检测各组试验鼠肌肉品质及抗氧化指标。结果显示,与LDF组、HDF组相比,LDF+Oo组能够提高日增体质量及末体质量(P<0.01),HDF+Oo组能够降低日增体质量及末体质量(P<0.01),降低滴水损失率和蒸煮损失(P<0.01),提高肌肉剪切力(P<0.01),并能提高小鼠血清中超氧化物歧化酶1(SOD1)及谷胱甘肽过氧化物酶(GSH-Px)含量(P<0.01),显著升高小鼠肝脏中核因子E2相关因子(Nrf2)、血红素加氧酶-1(HO-1)、醌氧化还原酶1(NQO1)蛋白表达(P<0.01)。结果表明,饲粮中添加100 mg/kg牛至油能够显著提高高、低脂饲喂小鼠末体质量及日增体质量,降低高脂诱导肥胖小鼠末体质量及日增体质量,进而起到缓解肥胖的作用;另外,饲粮中添加100 mg/kg牛至油还可改善高脂和低脂小鼠的肉品质,并提高它们的机体抗氧化能力。The purpose of this experiment was to study the effects of oregano oil on the meat quality and antioxidant capacity in C57BL/6J mice.Twenty-four healthy and similar-weight male C57BL/6J mice at 5 weeks age were selected.The mice were randomly assigned to 4 groups with 6 mice in each group.The grouping was as follows:low-fat diet group(LDF),high-fat diet group(HDF),low-fat diet supplemented with 100 mg/kg oregano oil group(LDF+Oo),high-fat diet supplemented with 100 mg/kg oregano oil group(HDF+Oo),the test period was 70 days,after the end of the test,muscle tissue and blood samples were immediately collected,and muscle quality and antioxidant indexes of experimental mice in each group were detected using ELISA,Western blot and other methods.The results showed that compared with the LDF group and HDF group,the daily weight gain and final weight(P<0.01)improved in the LDF+Oo group;the daily weight gain and final weight(P<0.01)reduced in the HDF+Oo group;drip loss and cooking loss(P<0.01)decreased,muscle shear force(P<0.01)enhanced,and the content of superoxide dismutase 1(SOD1)and glutathione peroxidase(GSH-Px)increased in the serum of mice(P<0.01).It significantly elevated the protein expression of nuclear factor E2-related factor 2(Nrf2),heme oxygenase-1(HO-1),and quinone oxidoreductase 1(NQO1)in the liver of mice(P<0.01).In summary,the addition of 100 mg/kg oregano oil to the diet significantly improved the final weight and daily gain of low-fat-fed mice,reduced the final weight and daily gain of high-fat-induced obese mice,and then relieved obesity.In addition,adding 100 mg/kg oregano oil to the diet also improved the meat quality of high-fat and low-fat mice,and increased their antioxidant capacity.
