摘 要:该试验旨在提高渤海黑牛的生产性能,利用引进的国际优秀肉牛品种黑色安格斯牛的冷冻精液与渤海黑牛人工授精杂交,试验对安格斯牛×渤海黑牛(安×渤) F1代牛和渤海黑牛的屠宰性能及肉质品质进行观测,并比较分析。结果表明:6月龄、 18月龄、 24月龄时安×渤F1代牛的体重显著高于渤海黑牛(P<0.05);24月龄安×渤F1代牛胴体重、屠宰率显著高于渤海黑牛(P<0.05)。安×渤F1代牛肉的蛋白质、脂肪及微量元素铁和锌含量显著高于渤海黑牛(P<0.05);安×渤F1代牛肉的眼肌面积、 p H值、失水率均显著高于渤海黑牛(P<0.05),但熟肉率、剪切力二者之间差异不显著(P>0.05)。可见,利用安格斯牛与渤海黑牛杂交改良效果显著,可以提高后代胴体重、屠宰率,同时也可以提高牛肉的产量。This experiment aimed to improve the production performance of Bohai black cattle.The frozen semen of the imported international excellent beef breed Black Angus was used to hybridize with Bohai black cattle.The slaughter performance and meat quality of Angus cattle× Bohai black cattle (Angus × Bohai) F1 cattle and Bohai black cattle were observed and compared. The results showed that the body weight of Angus × Bohai F1 cattle at the age of 6 months, 18 months, and 24 months was significantly greater than that of Bohai black cattle (P < 0.05);The carcass weight and slaughter rate of 24 month old Angus × Bohai F1 cattle were significantly greater than those of Bohai black cattle (P < 0.05). The contents of protein, fat, and trace elements iron and zinc content in the Angus × Bohai F1 cattle were significantly greater than those of Bohai black cattle (P < 0.05);The eye muscle area, pH value, and water loss rate of Angus × Bohai F1 cattle beef were significantly greater than those of Bohai Black Beef (P < 0.05), but there was no significant difference between cooked meat rate and shear force (P > 0.05). It can be seen that the crossbreeding of Angus cattle and Bohai black cattle has significant improvement effects, which can improve the carcass weight and slaughter rate of offspring, and also can improve the yield of beef.
