陈皮山药蜜丸的研制及配方优化

摘　　要：以陈皮、山药为主要原料,添加炼蜜研制陈皮山药蜜丸。以感官品质为考查指标,通过单因素试验和正交试验确定陈皮山药蜜丸的最佳配方参数。结果表明,陈皮山药蜜丸的最佳配方为陈皮用量5 g,紫莳药9号山药用量25 g,过80目筛,蜂蜜用量45 g,炼蜜时间7.5 min,即最优工艺条件下的感官评分为80分(满分100分),在此条件下制得的蜜丸表面光滑、口感细腻,有较好的清香味。Taking dried tangerine and Chinese yam as the main raw material,add honey to develop compound honey pill.By sensory quality as examining index,Through single factor test and orthogonal test to determine the best formula of the honey pill parameters.Results showed that the best formula for dried tangerine yam honey pill was that add dried tangerine 5 g,purple phuong medicine 9 yam 25 g,through 80 mesh sieve,honey 45 g and honey smelting time 7.5 min.The optimal process conditions of sensory score was 80 points,the honey pill surface smooth,delicate,good fresh scent.
