摘 要:冰浆具有制冰能效高、放冷速度快、流动性好等优点被广泛应用。但纯水冰浆面临含冰率(IPF)低、易冰堵的问题。在水中添加适量的添加剂可以起到细化冰晶颗粒,延缓冰晶生长,提高制冰效率等强化作用。本文研究了无机盐、醇、纳米粒子以及复合类添加剂对冰浆品质的影响,并分析了添加剂的作用机制。综述了不同冰浆添加剂的作用特点,对添加剂在冰浆中的应用提出建议。Ice slurry is widely used for its advantages of high energy efficiency,fast cooling speed and good fluidity,but pure water ice slurry faces the problem of low ice content(IPF) and easy ice blocking.Adding appropriate amount of additives in water can play a strengthening role in thinning ice crystal particles,delaying ice crystal growth,improving ice making efficiency and so on.The effects of inorganic salts,alcohols,nanoparticles and compound additives on the quality of ice slurry were studied,and the action mechanism of additives was analyzed.The function characteristics of different ice slurry additives were summarized,and the application suggestions of additives in ice slurry were put forward.
