摘  要:目的了解南通市2018—2020年餐具、饮具集中消毒服务单位整治工作情况及成效,为科学开展餐具、饮具消毒管理提供依据。方法按日常监督、责令整改和行政处罚分别统计每年整治工作量,对服务单位数量和日产量进行综合评估,对餐具、饮具消毒是否合格采用感观、理化和微生物限量3方面指标进行评价。结果2018—2020年,南通市卫生监督部门对餐具、饮具集中消毒服务单位共开展审查、检查和抽检等日常监督2418次,责令整改151次,行政处罚57次;通过整治,消毒服务单位由131家整并成为23家,生产规模由以日产1000套以下为主转变为以日产5000套以上为主;对1558份消毒餐(饮)具进行了监督抽检,感观指标、游离性余氯、沙门氏菌合格率均为100.0%。结论南通市开展餐具、饮具集中消毒服务单位整治工作,加大了监督管理力度,有效提升了行业整体水平。Objective To understand the renovation work and effectiveness of centralized tableware and drinking utensils disinfection service units in Nantong city from 2018 to 2020,and to provide basis for scientific management of tableware and drinking utensils disinfection.Methods According to daily supervision,order rectification and administrative punishment,the annual rectification workload was counted respectively,the number of service units and daily output were comprehensively evaluated,and the qualified disinfection of tableware was evaluated by sensory,physical and chemical indicators and microbial limits.Results From 2018 to 2020,the health supervision department of Nantong carried out daily supervision on centralized disinfection service units of tableware for 2418 times,including examination,inspection and sampling inspection,and ordered rectification for 151 times and administrative punishment for 57 times.Through renovation,the number of disinfection service units were consolidated from 131 to 23,and the production scale changed from less than 1000 sets per day to more than 5000 sets per day in most service units.A total of 1558 disinfected tableware and drinking utensils were monitored,and the qualified rates of sensory indicators,free residual chlorine and salmonella were 100.0%.Conclusion Nantong City carries out renovation work of centralized disinfection service units of tableware,strengthens supervision and management,and effectively improves the overall level of the industry.
