摘  要:多糖是一种具有多种生物活性的高分子化合物,近年来在医药、功能性食品、护肤等领域备受关注。多糖的生物活性受自身理化性质、结构特征及制备过程的影响,缺乏稳定性,且作用机制尚不明确,从而限制了其更广泛的开发和利用。从相对分子质量、单糖组成、空间构型、提取过程(原材料预处理方法、提取方法、提取溶剂、纯化方法)等4个方面出发,对多糖生物活性影响因素的研究进展进行了综述,为多糖的更进一步研究及有效利用提供了指导。Polysaccharides is a polymer compound with various biological activities,which has received widespread attention in fields such as medicine,functional food,and skin care in recent years.The biological activity of polysaccharides is influenced by its own physicochemical property,structural characteristics,and preparation process.The unstable biological activity and the unclear action mechanism limit the wider development and utilization of polysaccharides.In this paper,starting from four aspects such as relative molecular weight,monosaccharide composition,spatial configuration,and extraction process(raw material pretreatment method,extraction method,extraction solvent,and purification method),we review the factors influencing the biological activity of polysaccharides,providing guidance for further research and effective utilization of polysaccharides.
