摘　　要：社区老年人全日照料设施中的备餐空间是老年人集体用餐、生活的功能性空间,能否及时、卫生且高效地将餐食配送到老人身边对老年人生活品质的影响至关重要。通过对西安市三家社区全日照料设施照料单元内不同类型的备餐空间进行实地调研,对其中老年人与照护服务人员的行为进行观察,分析当前社区全日照料设施内照料单元备餐空间的使用现状,总结其现存的位置选择不佳、存在视线盲区、备餐台功能配置不完善以及备餐过程缺乏老人参与等问题,并提出宜将备餐空间毗邻护理站,就餐区布局、备餐台功能复合化,小型护理站应兼容备餐功能,鼓励老人参与备餐、分餐活动等策略。Meal preparation space in community full-time care facilities for the elderly is a functional space for the elderly to have group meals and live together,and whether meals can be delivered to the elderly in a timely,hygienic and efficient manner is crucial to the quality of life of the elderly.By conducting field research on the meal preparation spaces in the care units of three different-sized community whole-day care facilities in Xian,observing the behaviours of the elderly and the caregivers,and analysing the current use of the meal preparation spaces in the care units of the community whole-day care facilities,we summarise the problems of poor location selection,blind spots,inadequate functional configuration of the meal preparation counters,and lack of participation of the elderly in the process of meal preparation,and propose that the meal preparation spaces should be made more functional.It also proposes strategies such as placing the meal preparation space adjacent to the nursing station and the dining area,compounding the functions of the meal preparation counters,making small nursing stations compatible with the meal preparation function,and encouraging the elderly to participate in meal preparation and meal sharing activities.
