摘 要:地方美食是旅游目的地的核心要素之一,但近年来,各地旅游美食的地方性危机逐渐凸显。文章从宏观视角出发,以城市典型街区为研究对象,以美食店铺为基本单元,采用网络数据挖掘的方法,以地理距离和我国各级非物质文化遗产名录为评价标准的核心参照,构建了旅游美食地方性的指标体系,进而对中国主要城市典型街区的旅游美食地方性进行了实证评价。研究主要有以下结论。1)旅游美食地方性的指标体系由3个二级指标和7个基本指标构成。2)目前,我国主要城市典型街区的旅游美食地方性总体处于较低水平,其中,环境地方性和服务地方性的缺失问题尤其突出。3)各城市典型街区中旅游美食地方性高分店铺数量和比例表现较好,大理大理古城、西安北院门、成都宽窄巷子、福州三坊七巷和杭州清河坊的高分店铺较多。4)区域旅游美食地方性与人文地理区划存在一定关联,中国西南一带少数民族聚集区相对较高。该研究在研究视角、旅游美食地方性指标体系构建以及网络数据挖掘等方面具有一定的创新性。Local food is a core element of tourist destinations,but a crisis in the locality of tourism cuisine has emerged in recent years.Little attention has been paid to the quantitative evaluation of tourism cuisine locality.This study addresses this gap by constructing an index system to evaluate tourism cuisine locality,using network data mining and the List of Intangible Cultural Heritage in China as references.Focusing on gourmet shops in typical districts of major Chinese cities,this research identifies key characteristics and issues in tourism cuisine locality.This study presents several findings.1)The index system for tourism cuisine locality comprises three secondary indicators(food locality,environmental locality and service locality)and seven basic indicators.Food locality includes food source,representativeness and diversity.Environmental locality covers the dining environment and characteristics of service staff.Service locality involves dining service and local performances.2)Overall,tourism cuisine locality in the typical districts of major Chinese cities is generally low,with significant deficiencies in environmental and service locality.3)There are notable differences in the number and proportion of high-scoring gourmet shops across cities.Dali Ancient City,North Gate in Xian,Kuanzhai Alley in Chengdu,Three Lanes and Seven Alleys in Fuzhou,and Qinghefang in Hangzhou have higher concentrations of high-scoring ones.4)There is a correlation between regional tourism cuisine locality and human geography regions,with higher locality scores in the ethnic minority areas in Southwest China.The Southwest China,South China,and East China Human Geography Regions exhibit higher scores.The main contributions of this study are as follows.1)Exploring tourism cuisine locality from the perspective of urban typical districts,such as historical and cultural districts,and tourism and leisure districts,which align with the spatial scale perceived by tourists.2)Constructing an index system for tourism cuisine locality based o
