摘 要:基于水雾化系统构建内环流控湿通风工艺,对初始水分含量为9.34%的玉米籽粒进行80 d的通风处理。通过研究发现,利用内环流控湿通风工艺可以显著提升储藏过程中玉米的水分含量,并能实现1.5%水分含量的提升,且对应的脂肪酸值上升仅为2.0 mg KOH/100 g。此外,通风处理后的玉米籽粒表面的霉菌数量显著降低至2.50 lg(CFU/g)。成本分析进一步验证了可在日均耗水200 t和用电180 kW·h基础上实现有效的控湿通风,产生极为显著的经济效益,有利于低水分玉米的储藏、加工及销售。A water atomisation system was used to construct an endocyclic flow controlled humidity ventilation process to ventilate maize kernels with an initial moisture content of 9.34%for 80 d.The process was used to improve the moisture content of maize kernels by 1.5%during storage.It was found that the moisture content of maize in storage could be significantly increased by 1.5%with a corresponding increase in fatty acid value of only 2.0 mg KOH/100 g by using the inner-loop flow moisture-controlled ventilation process,and the number of moulds on the surface of maize kernels after ventilation was significantly reduced to 2.50 lg(CFU/g).The cost analysis further confirmed that effective moisture-controlled ventilation could be achieved on the basis of a daily average of 200 tons and 180 kW·h.yielding extremely significant economic benefits for the storage,processing and marketing of low-moisture maize.
